You'll need to rebuild Gtk+ to use a different implementation of the GDK layer. See Imendio's instructions for doing this: http://developer.imendio.com/projects/gtk-macosx/build-instructions Cairo and a couple other of the requirements also need to be compiled to natively target MacOS API's.
