Serdar,
I have several books on Gnome/GTK+ but I believe the best by a long way is "Gnome/GTK+ Programming Bible" by Arthur Griffith. Unfortunately this book is based on GTK+ 1.2 so is a little out of date, but other wise it is an excellent book.
