Wireshark capture of video calls...

If I configure GnuGK as a H.323-H.323 proxy, so that all control
signals and media traverses through GnuGK, should I be able to perform
a wireshark capture of the packets (and assuming that I have
sufficient disk space) simply dump the video packets to disk and then
re-assemble them into a video stream playable with something like VLC?
