Yes you're right - in proxy mode gnugk will receive data (RTP) packets, will rewrite ip/rtp headers accordingly and will forward packets, but it will never encode/decode data itself, so gnugk cannot be used as a proxy between 2 devices using different codec's. Non proxy gk's could be runned in 2 modes routed signaling or direct signaling.
