There are a lot of "make your own liveCD" toolkits out there now. 
Re-mastering Knoppix was once the main way to get your own liveCD, but
the toolkits are probably better (more easily customised).

Ubuntu for a long time didn't have a particularly good liveCD (rather
slow at boot-up), but they seem to have put a lot of effort into it
recently (they've moved over from cloop to Squashfs, which is  faster
for instance).  If you base the liveCD on Ubuntu make sure it is the
Dapper Drake release.
