You'd probably get faster and more helpful responses on one of the Ubuntu mailing lists (or forums, if they have.) I've only played with Ubuntu briefly in a VM, and it doesn't look anything like the snapshots you attached. Gnome is infinitely tweakable, so you could adjust what you have. But I'm guessing there is an easier way to get a completely different (and in your case, less cluttered) desktop, probably by selecting a different theme.
