Everything is working perfectly again. Turns out the felon in this case was a utility called pango-graphite from the Summer Institute of Linguistics. Supposedly pango-graphite enables stacking of combining diactrics on characters, in addition to other features useful to linguists. However, it is clear that pango-graphite is not compatible with Gnome on Jaunty x86_64.
