With regard to gluster, latency affects performance so if it's performance you're looking for, lowest latency switches would be wiser.
If it's just network design you're asking for, this might not be the most appropriate forum.

Just thinking about i want bonding and then i might even need a brige
to bring the "two sides of the nodes together"?
Will i then get loop? Do i need SPF or something alike?
Could i also use TCP Multipath? ( i have no experience with tcp
multipath so far)
