Ok, so you are not short of memory! Your mount command suggests you are using the Fuse client, is it just the gNFS server that fails? That shouldn't affect the Fuse clients. I haven't worked out how much memory the gNFS server is supposed to use but on a test system with 64GB, it uses 16GB.
