IMO, any option can only be (re)set if its defined in volume map entry in glusterd-volume-set.c. You might have to use the respective .key for that option which might differ some time. In short search socket.ssl-own-cert in this file and try volume set with its .key.

Did you mean transport.keepalive?
The options are defined in rpc/rpc-transport/socket/src/socket.c
but gluster volume set help do not list them.
