Since I will be taking time off for the remainder of September, and since I don't want to leave y'all gentle people hanging, I tallied up the available dates, and we got a winner: October 19th/20th 2021, 15:00-19:00 UTC it is! As announced earlier, it will be run Unconference style via Zoom, with October 20th being the "spill-over day".
