There always is a room for Documentation/ improvements ;-) Seriously, I think config.txt mentions GIT_WORK_TREE and GIT_DIR and git.txt has separate sections for environment and config, but I do not see a good section that gives a comprehensive view of how they work together to affect your git experience.
