Photoshop CS5 and CS6 handle up to 1000 protocol items. See Preferences/Performance/History and cache. On Windows the Preferences dialog is in the Edit menu. In GIMP you have a lower limit of undo levels and define the maximum memory for undo actions. See Edit/Preferences/Environment.
