It seems to me that in the current git version (updated today), all the dynamic features disappeared from the options of tools like pencil or paintbrush. Or I'm not seeing them where they are?

Hi. Please get GIMP from git. A lot of what you want is already there
or at least half way there. Curves for dynamics for example. If you
are seriously interested in helping out a) Fetch gimp from GIT b) join
us at #gimp IRC channel.
