I believe the mainline tree has a few 8-bit cpus: Atmel AVR (8-bit RISC) Freescale 68HC12 (8-bit/16-bit CISC) Freescale 68HC11 (8-bit CISC) However, I /think/ that the AVR is the only one still in current gcc trees.
