You can certainly mix different guests on different hosts. Yes, LVM is a very good match with virtualization. It's also much faster to use LVM, instead of (eg.) file-backed guests. I'm using exactly this scheme -- with HTTP (ie. Apache) as it happens, just because it was easier to set up.
