You can't do it -- the problem is a limitation in the emulated Cirrus Logic graphics card. I think the max you'll ever get is 1280x1024 in 16 colours:
http://fabrice.bellard.free.fr/qemu/qemu-doc.html#SEC50As another reply suggested, you could try running a headless X server + a VNC server inside the guest. Or simpler is just to 'ssh -Y ...' into the guest and run X programs directly, assuming the guest is running some sort of Un*x.
