any people try and know this configuration workable ?

Total mem : 3GB
6 x Dom-U Guest with 430MB memory each
remaining arround 380MB memory in Dom-0
is there any min memory requirement for Dom-0 ?

I can do better than that! I've got a machine with 2 GB physical RAM, Dom0 has 350MB assigned to it, and there are 14 DomUs running.

Small Dom0s don't seem to be much of a problem in practice, but make sure there is enough for the Linux distribution inside to run comfortably. Most modern Linux distros are quite bloated and need a minimum of 128 MB to be really happy, even without X.
