Install to an LVM should Just Work --- I have half a dozen different Xen
guests on different LVs on one of my boxes.  

The default setup partitions the LV as a disk, not as a single
filesystem, true; but if you want to share the data with the dom0, then
you can do so easily with lomount (it's easiest if you don't get the
domU to set up its own LVM on top if you're going to do this.)
