I'm currently working on new howto for Fedora Documentation. But I wrote step 
by step guide for OpenLDAP/NSS Testday, you can use it:

In short:
- fresh install openldap-servers (old version)
- update base DN in olcDatabase{1}bdb.ldif, add olcRootDN and olcRootPW
- restart server
- ldapadd some data (389-ds has gendb.pl tool, for generating sample data)
- try if it works (ldapsearch could be enough)
- update openldap
- ldapsearch should give you the same data
