To clarify, I do not think this is a yum bug.
I'd need to see the rest of the depsolving output - but it seems like a
valid removal chain.
sendmail removes smtpdaemon.
now if you want to remove sendmail and replace it with another smtpdaemon
then you can use yum shell:
yum shell
remove sendmail
install postfix # (or exim or whatever)
run
that should work correctly.
