You can use the command line 'xrandr' tool, it should do the job. It's quite simple to use and you can script it up - it's just something like 'xrandr --output FOO --right-of output BAR'. The only wrinkle is that nouveau doesn't yet handle dynamic framebuffer resizing for side-by-side setups, so you'll need an xorg.conf with a Screen section with Virtual lines for the resolution you need.
