ro,nosuid,nodev,uhelper=hal,shortname=lower,uid=500 0
0

There it is, change the ro (which is read-only) to rw

/dev/sdb1 /media/disk vfat
rw,nosuid,nodev,uhelper=hal,shortname=lower,uid=500 0
0

That should cure it :)
