it should be possible.
irc in rhl-days anaconda prefered something like this for different roots
/1  /2  /3  /4 ...
but you can take what you want

eg.
1;   e2label
# e2label /dev/sda3 /bla

2;  /etc/fstab
LABEL=/bla / ext3 defaults 1 1

3;  /boot/grub/grub.conf
...  root=LABEL=/bla  ...


tested, it works.
