Defaults are usually not reviewed for every release. The choice between
GNOME and KDE is not clear cut. Someone will want XFCE as default.
Others fluxbox.

That is a well known fact.

What prevents you from choosing KDE and leaving out GNOME during the
installation process?

Ekiga and Evince require the entire gnome desktop somewhow. Although
they can be replaced, I suppose, Evince is kinda nice, and no
equivallent Qt/KDe app exists in Extras that I know of for Ekiga.
