I vaguely recall that if you leave something out of the KS file,

I've read it, haven't tried it. However, a non-geek can type some of that stuff at the boot prompt whereas ks is for the more accomplished.

I'm thinking of something that might be even simpler than ks for simple cases.

Anaconda asks you. Or do one manual installation, and use the anaconda
file in /root as a basis for your KS file.

Speaking of which, how's your list of packages look?
