I have had now a more detailed look into the Bios menues - I am really a no expert in things like Bios.
There is in case of my Acer E15 E5-571G a button "Security" leading to "Select an UEFI file as trusted
for executing" at the end of this menue steps I choose "grubx64.efi" etc.
Now F21 on an USB drive can be run in UEFI mode.
