Hi, Mihai. As F18 is not under development any more and this is not a testing-related question but a request for support, it would be better placed on the users@ list or the forums. But I'll answer anyway. :)
There is a manual/custom disk partitioning mode in the f18 installer and it is capable of just about everything the F17 custom install screen was capable of, but it works very differently. For more details on this, see https://fedoraproject.org/wiki/Anaconda/NewInstaller and the installation guide at https://docs.fedoraproject.org/en-US/Fedora/18/html/Installation_Guide/ , which has some good instructions on using the new partitioning tools.
Installing multiple desktops is disallowed in the interface by design in F18, and this is not planned to change. There is extensive discussion and argument on this at https://bugzilla.redhat.com/show_bug.cgi?id=875433 , but please don't comment further on that bug unless you have something new to say that has not already been said. If you want to have multiple desktops installed, you can install additional desktops after initial installation, or you can use a kickstart - https://fedoraproject.org/wiki/Anaconda/Kickstart .
