Just to throw in my own experience, as a lightweight desktop guy since quite long, for me it is not that hard to remove fedora-icon-theme. Currently I have only pidgin and firefox that are removed, but these are application I find particularly unsuited for my uses, too much bloated and with much too pretty and heavy gui. However I haven't found lightweight replacements so I still use them (in fact for pidgin I know there are replacements, but I haven't have time to learn them).
