Boot the install media in the rescue mode, chroot to the mounted root file system, and run passwd to change the root password. (You can probably grab most of the text from an explanation on how to re-install Grub.) I am not sure how the rescue mode handles an encrypted file system. Will it mount one if you supply the password?
