This works:

%build
%cmake \
  -DALLOW_IN_SOURCE_BUILD:BOOL=ON \
  -DJAS_ENABLE_DOC:BOOL=OFF
%cmake_build

%install
%cmake_install

# Unpackaged files
rm -f doc/README
rm -f %{buildroot}%{_libdir}/lib*.la

%check
%ctest
