Even if gmail drops the headers, they know at time of receive what is what (bad magic) so if you use google's own filtering you can tell it to file messages sent to "this list" under a specific tag, you can also tell it to keep in inbox if you are explicitly in CC or TO (potentially requires two separate filters to do that selectively). It sucks, but it can be worked with to some degree...
