Minimal font set is a hugely subjective question that depends on whether you care about missing glyphs on internet pages or not, if you feel emoticons are a must have or useless frills, if you just want to display text in app windows, or compose and print documents, if you want math/tech/symbols, if you want coding/monospace glyphs, if you want a wide selection of font faces or just bold/italic, if you want windows compatibility or not and so on.
That's why the default Fedora font set is so big. If you try to cut it down, you'll also sacrifice some usages.
You can try to install just the dejavu set (good all-purpose european set), or just cantarell (if you only want to do a few app screenshots and do not care about coverage), but it will almost certainly be unsatisfactory in some cases.
