Missing /boot/grub2/grubenv symlink target in remix composes

Hi,

I am having a strange issue with my latest Kannolo (Fedora Remix) composes. 
(In case it matters: I use livecd-creator, not livemedia-creator.)

For some reason, the symlink /boot/grub2/grubenv is now dangling, the target 
/boot/efi/EFI/fedora/grubenv is missing. This makes grub2-install and thus 
the installation process fail. This did not happen with the composes from a 
couple days ago.

At first, I suspected this F26 update:
https://bodhi.fedoraproject.org/updates/FEDORA-2018-f6166caf0b
which also changed the symlink from absolute to relative, but my remix of 
version 27 also has the same issue and no such grub2 update reached stable 
there.

I am now using this workaround:
https://svn.calcforge.org/viewvc/kannolo?view=revision&revision=310
but I would love to figure out what on Earth is going on there.
