Actually it's even simpler to use --postinstall:

mock --postinstall libtrirpc.src.rpm
mock --no-clean dependent1.src.rpm 
mock --no-clean dependent2.src.rpm 

Works nicely for a quick rebuild where you're just testing that things
compile.
