It's controlled via /etc/sysconfig/desktop

To make KDE the default desktop environment, set
DESKTOP=KDE

To use KDE's kdm loginmanager, instead of gdm, set
DISPLAYMANAGER=KDE

Then either drop to runlevel 3 and back to 5 or reboot (simply restarting X isn't enough).
