Changing the default theme may also require unbranding Firefox no matter if we can ship our extensions or not. But those are just potential situations. AFAIK we are not seriously considering to ship any extension in the default installation now. We don't have to get rid of Firefox brand just because we might want to ship some in the future. When the time comes, we can trade Firefox brand for a particular extension if it brings more value to us. Unbranded Firefox is already in repositories. Sure, we can default to Icecat, but even if Icecat is the default browser I don't see a reason why Firefox can't be in repositories.
