I think the number of disks does not matter.  For a number of years,
I have used a python application controlling rdiff-backup to perform
unattended backups on several workstations and servers. The snapshot
feature of LVM makes reliable backups possible with no manual effort.
Most of my systems have mdadm raid encrypted physical volumes but
LVM snapshots work fine on a single disk.
