sounds like a perfect use for iSCSI or plain ol FC-san. everybody mounts the same LUN (which has the LVM structure on disk AFAIK) but its up to you the admin to make sure an LV is only mounted by one host at a time. I dont know if you modify the LVM structures (resize, rename, new, delete, etc) whether or not all the other Xen0 or XenN have to be told. I would guess not.
