could not add the space to the existing partition without LVM.  Can

You could delete and recreate the partition, then gfs_grow afterwards.
LVM has been designed for growing and extending the device underlying a FS, and is much less risky than manipulating the partition table.

Caveat: when growing a big LUN, using parted and gpt, don't get bitten by this bug:

Parted segfaults because of extended devices with GPT partition table

There are hotfixes out for RHEL 4.4 and patches for the upstream version of parted on the bug-parted mailing list
