How does /proc/pagetypeinfo look like?
Also as Michal said, collecting the whole of /proc/vmstat (e.g. catting
it to vmstat.$TIMESTAMP once per second) when the bad situation is
happening, would be useful.
You could also try if the bad trend stops after you execute:
 echo never > /sys/kernel/mm/transparent_hugepage/defrag
