We use podman for our own as well as our customers clusters (most of
them). SUSE‘s product was also based on podman, so there definitely
production clusters running with podman and I haven’t faced an issue
yet. So we’re quite happy with that. :-)

Docker comes with the Docker daemon that when it gets an update has to be
restarted and restarts all containers. For a storage system not the best
procedure.
Everything needed for the Ceph containers is provided by podman.
Very good point. I didn't know (always lazy and use docker).
