OS suggestion for further ceph installations (centos stream, rocky, ubuntu)?

Hi,
there was a bit of debate on the list about centos stream and if it's
suitable to host something like ceph in production.
So as I am now going to update our clusters I would like to know if there
are any suggestions on the os.

Currently we don't plan to go the docker / ceph orch route, because we had
a lot of problems getting RGW daemons running and that layer of complexity
isn't something I want to deal with it now.
We allready have a lot of centos 7 and ubuntu 20.04 systems for ceph.

I would like to bring them to a general standard.

The official OS recommendations seem to be a bit out of date:

(No pacific mentioned, no ubuntu 20.04, no centos stream, but still the
outdated centos 8)

Personally I like ubuntu a lot, but most of the ceph developers seem to
come from redhat (or at least a RH flavored background) to I could imagine
that this might be a slightly more optimal way.
