Now, what I meant, but perhaps didn't write was:
1. Bluestore is default, Filestore was the older version, not default
anymore.
2. Filestore of course used whole drives, partitions or LVM volumes but
could be made to use a dir, if you did some work yourself.
3. ceph orch ... <- from Octopus, meaning recent, meaning that it would not
be a huge shocker if the deprecated non-default filestore type itself in
deprecated non-default mode did not come with a "can I just type 'a b c'
and some other part does it all for me?"

If you want to be 2-3 steps away from recommended, default, recent I think
you will have to step up to the task.
Look up how people did it some 4-5-6 major releases ago, when filestore was
the only option.
