I believe the fstab line for ceph-fuse in this case would look something like [1] this. We use a line very similar to that to mount cephfs at a specific client_mountpoint that the specific cephx user only has access to.
[1] id=acapp3,client_mds_namespace=fs1 /tmp/ceph fuse.ceph defaults,noatime,_netdev 0 2
