All of the metadata for the filesystem resides in a different pool from the data so I doubt it would "format" the pool land erase the RBDs. Again, though, not a supported use case which means future releases could do something to mess it up and it wouldn't be a bug to be fixed as it isn't a feature.
Making the filesystem might blow away all the rbd images though.

Afaik, I don't think anything will stop you from doing it, but it is not a document or supported use-case.
