To partially answer my own question:

OPTION(osd_recovery_sleep, OPT_FLOAT, 0) // seconds to sleep between recovery ops

OPTION(osd_recovery_max_single_start, OPT_U64, 1)

Funny, in the examples where I've seen osd_recovery_max_single_start it is being set to 1, which is the default.
