There are already established protocols and open source implementations
of these protocols when it comes to handling email.

Why do you want to reinvent the wheel?

What kind of protocol do you imagine your server and your clients speak
to each other?

There once was an effort to extend the IMAP server Dovecot with a librados
storage backend. Maybe this could be something for you to look into.

Dovecot is able to handle multiple companies with multiple users and you
can connect any IMAP client to it. There are even modern web GUIs for that.
