all the non-daemon programs (ceph, rados, rbd, etc.) are identified as
"client.admin" by default, so will go to the log file configured for
that entity, by default /var/log/ceph/$cluster-$name.log, or (probably)
/var/log/ceph/ceph-client.admin.log
librbd log level is set by "debug librbd" in the conf file (or
--debug-librbd=
on the command line)

That looks like you've got a missing class module or mismatched versions. What do
for i in $(ceph osd ls); do ceph tell osd.$i version; done
and
ls /usr/lib/rados-classes
show?
