Make sure that you never put /boot on LVM because your machine will not boot.

Yes, add a new disk to the system, then run commands such as:
pvcreate /dev/<whatever device it is>
vgextend VolGroup00 /dev/<whatever device it is>
lvextend (either -l +## to add extents or -L +## to add size)
/dev/VolGroup00/LogVol03
resize2fs /dev/VolGroup00/LogVol03
